History of Oak Barrels

Oak (and other woods) are the common denominator that create the added aroma and complex flavors we enjoy in our wine and spirits. Throughout history, Oak Barrels have been associated with wine, beer, whiskey, scotch, brandy and other spirits. 

Why? In days past hygiene and health knowledge was rudimentary; and alcohol stored in wooded barrels was safer than water to drink. Since wood is naturally porous, the barrels absorb whatever has been stored in them, increasing in concentrations of flavor over time. It didn't take long for society to realize that Oak Barrels imparted a pleasant taste and begin to intentionally Oak their wines and spirits.

Once the wine or spirit is added time to mellow, draw the flavor from Oak and develop complexity. The longer amount of time, the greater the flavor...which improves the quality and value of the product.

What is Toasting

Toasting is the process of heating the Oak (in this case our "Oak Wedges") in an oven or under fire heating or charring the wood to specific level of flavor. Toasting breaks down the molecular structure of Oak allowing the transfer of Oak flavor (and it's flavor profile created through the heating process) and aroma. Each level of toasting enhances wine, beer and spirits with complexity and aromas.

   Our Oak is sourced from the barrel making industry and air-dried (seasoned) for 24 months to achieve 12-14% moisture levels. Natural drying allows rain and other elements to reduce the tannin's in the wood, softening the flavors.

 Oak Wedges are properly seasoned and toasted in three variations including, light, medium PLUS and heavy. Toasted Oak imparts immediate flavor and aroma profiles to your spirit of choice.
